Winter Alkalinizing Broth
The practices of Chinese medicine harmonize with nature. We never eat cooling fruit during winter. Smoothies are something best enjoyed during the late spring and summer bursting with fruit, something that is not found during winter. Instead, we take cues from nature and eat what is available in season, which can bring the most reinforcement and nourishment. A wonderful alternative to juicing or the summer smoothie is a winter broth that alkalinizes while reinforcing potassium is a simple vegetable broth with 3 ingredients. For about one cup: In 2 cups of water add; 1 stalk of celery, chopped 1/2 zucchini, chopped A few sprigs of parsley Bring to a boil then simmer down to about 1 1/2 cups. Strain out ingredients and drink up! Additional recipes to follow will be Winter Root Soup, a favorite around my home. Also check out my Jan 9, 2011 blog on rice congee, and soup with homemade beef or chicken broth also found on my blog. Stay nourished, warm, and cozy for the remaining winter weeks.
